Fluffy Blueberry Pancakes

  • 3 eggs
  • 150 g ricotta cheese or grated cheese mass without grains.
  • 500g milk
  • 1 tsp. baking powder
  • sugar 2-3 tbsp.
  • 2 cups flour
  • salt
  • vanillin
  • sunflower oil
  • Blueberries
  1. Ricotta or cottage cheese weight to wipe that all grains have disappeared.
  2. Add eggs, salt, sugar, baking powder, a glass of milk and whisk to stir.
  3. Only after the mass was homogenous add the rest of the milk.
  4. Pour the flour in stages, the dough should look for consistency between pancakes and crepes. Even closer to the latter. Since our should get fluffy, not thin pancakes.
  5. In the end, add 3-4 Art. l sunflower. oil and stir again.
  6. For fluffy pancakes I use a small teflon frying pan diameter 14 cm
  7. Before baking pan I first blink to oil, the next not.
  8. Pour batter into the pan and sprinkle with berries (strawberries, blueberries)
  9. Hot pancakes immediately served to the table with homemade yogurt, sour cream and berry syrup.
